The coffee undergoes a 72-hour dry anaerobic fermentation while retaining the mucilage layer surrounding the beans. During fermentation, dried coconut is added to enhance complexity and sweetness. The coffee is then carefully dried on raised beds to achieve optimal moisture content and preserve its unique flavor profile.
